- 5 cloves fresh garlic, minced or pressed
- 3 green onions, chopped
- olive oil
- 1 lb broccoli
- 1 can (400 ml) coconut milk
- 4 teaspoons curry powder
- 1 teaspoon salt
- 1 large can (540 ml) chickpeas, drained and rinsed
- 1/2 tablespoon cornstarch, dissolved in water (2 tablespoons)
Instructions
- In a medium-sized heavy saucepan, sautée garlic and green onions in a few tablespoons of olive oil.
- Add coconut milk and broccoli. Simmer over moderate heat for 5-10 minutes, until broccoli is nearly done.
- Mix in curry powder and salt.
- Add chickpeas.
- Bring to a boil and add the cornstarch.
- Continue boiling for a minute or so, stirring, and then remove from heat.
