Curry with Broccoli

Straightforward and forgiving. If curry is a dish you’ve never before attempted, then this is the recipe for you.

Ingredients may be substituted, added, or taken away according to your preference.

Best served with rice.

Ingredients

  • 5 cloves fresh garlic, minced or pressed
  • 3 green onions, chopped
  • olive oil
  • 1 lb broccoli
  • 1 can (400 ml) coconut milk
  • 4 teaspoons curry powder
  • 1 teaspoon salt
  • 1 large can (540 ml) chickpeas, drained and rinsed
  • 1/2 tablespoon cornstarch, dissolved in water (2 tablespoons)

Instructions

  1. In a medium-sized heavy saucepan, sautée garlic and green onions in a few tablespoons of olive oil.
  2. Add coconut milk and broccoli. Simmer over moderate heat for 5-10 minutes, until broccoli is nearly done.
  3. Mix in curry powder and salt.
  4. Add chickpeas.
  5. Bring to a boil and add the cornstarch.
  6. Continue boiling for a minute or so, stirring, and then remove from heat.
